Our 2 sushi chefs combined, have over 35 years of experience crafting sushi.

Pancho – Kai Ola’s Head Chef.

Pancho has been crafting sushi for over 20 years! He was trained working under the legendary Japanese born Sushi Chef Ota, for 10 years. Pancho’s style is a blend of traditional fusion with a Baja West Coast style.

He is a family man, so when he is not busy rolling sushi in Leucadia, he is busy with his 6 children.

Matt – Kai Ola’s Sous-Chef.

Matt grew up surrounded by the restaurant industry, as his parents brought him up in their own Japanese fusion style eatery. His 17 years of training includes Yummy Sushi in Coronado and he was the Executive Chef at the Edamame sushi restaurant prior to joining the Kai Ola team.

Matt is also a family man, and a San Diego local. Make sure to visit him as he will be crafting his sushi frequently with Pancho – while bringing his own unique style of sushi to Leucadia, Encinitas.
